Spicy Beef With Asparagus and Mushrooms

  • 8 ounces New York strip steaks, thinly sliced
  • 2 tablespoons orange juice
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 tablespoon Thai sweet chili sauce or 1 tablespoon chili paste
  • 3 green onions, sliced
  • 3 garlic cloves, minced
  • 1 inch long piece gingerroot, minced
  • 1 bunch asparagus, cut on diag into 1-1/2 in. pieces
  • 8 ounces sliced mushrooms

  • Marinate beef in orange juice and soy sauce for 1 hour.
  • Heat oil in large skillet. Add chili sauce, onions, garlic and ginger. Stir fry for 1 minute.
  • Add beef and marinade. Stir fry for 2-3 minutes or until nearly cooked through. Remove beef to plate.
  • Add asparagus. (Add more oil if needed.) Stir fry until cooked but still slightly crunchy, about 4 minutes. Remove to plate.
  • Add mushrooms. Stir fry about 4 minutes.
  • Reduce heat to low. Return all ingredients to skillet and heat through for about 1 minute.

I live downtown and I love food and beer. (Mostly beer!) My husband and I recently moved back to Arkansas where we met 16 years ago. We both lost our nice cushy jobs, but have now both found employment and are learning to live a simpler life. We are owned by two cats. I can't imagine a life without pets. I love to cook and try new things and I'm thrilled to have a guinea pig, ur um, I mean husband around to try new recipes with. A couple of nights a week I make it a point to meet friends at our favorite watering hole. We enjoy sampling different kinds of beer while solving the world's problems. The establishment has a club, and members (beerknurds) are recognized and rewarded each time they complete the Ring of Honor by drinking 200 different beers. My rating system: 5 stars: Out of this world, crazy good 4 stars: Love it! Will make it again 3 stars: Not really crazy about it 2 or 1 stars: I wouldn't even bother reviewing unless I felt there was something mistaken about the recipe. I also love music and I love being introduced to new music.
