Directions

  1. Pour chicken broth into stock pot and bring to a boil.
  2. *Add chicken breasts, reduce to a simmer and cook for about 20 minutes or until chicken is cooked through.
  3. Take chicken out and shred or cut into bite-sized pieces.
  4. Return chicken to the broth.
  5. Add remaining ingredients and simmer for 1 to 2 hours.
  6. Garnish soup with avocado, cheese, and chips.
  7. *Left-over cooked chicken can be easily substituted.
