- 2 medium size chicken breasts
- 1⁄2 lb bulk mild sausage
- 1 tablespoon cajun seasoning
- 1 tablespoon cumin
- 1 tablespoon ground red pepper
- 1 tablespoon red pepper flakes
- 1 cup of chopped onion
- 1⁄3 cup of chopped onion
- 1 (1 1/4 ounce) package mccormick white chicken chili seasoning mix
- 1⁄4 cup jalapeno, deseeded and chopped (adjust for your flavor)
- 1 (16 ounce) can pinto beans
- 1⁄2 cup chicken broth
directions
- Brown Cubed chicken breast and ground bulk sausage together.
- Add cajun seasoning, cumin, ground red pepper, pepper flakes and 1 cup onions - Simmer until onions are transparent. Do not drain unless your sausage is really heavy with grease - you will want some sausage grease for flavoring.
- Add remaining onions, McCormick seasoning, jalapenos, pinto beans and chicken broth.
- Simmer all for 45 minutes. Add more chicken broth to lessen thickness as needed.
