  1. Heat oil in large pot on medium heat.
  2. Add garlic and chill, cook 4 minutes till softened.
  3. Add ham hock, beans, tomatoes and water.
  4. Cook 60 minutes or till beans are tender.
  5. Remove ham hock, shred meat off bone, return meat to pan.
  6. Add salt and pepper and coriander.
