Spicy Chipotle Cole Slaw

- 2 teaspoons chipotle chiles in adobo, finely chopped (use more if you like it really spicy)
- 1⁄2 cup mayonnaise (add more if you like it saucier. 1/2 cup makes just enough to lightly coat)
- 2 tablespoons honey
- 1⁄4 cup lime juice
- 4 cups green cabbage, shredded very thin
- 4 cups red cabbage, shredded very thin
- 1 cup red onion, sliced vertical very thin
- 1 cup green onion, finely chopped
- 1⁄2 - 1 cup carrot, shredded
- 1⁄4 cup fresh cilantro, chopped
directions
- Make the dressing first. Combine the chipotle peppers, mayonnaise, honey and lime juice.
- In another large bowl, combine the cabbages, onions and carrots. Drizzle the dressing over the top, sprinkle cilantro over the whole thing, and toss well to combine.
- Season with salt and pepper as desired and chill until serving time.

This is excellent!! My husband and I LOVE spicy, so this was right up our alley. I halved the recipe, but upped the chipotle chillies. I think I used like 2 1/2 chopped up chillies. It was almost too spicy, but that's my fault...next time I'll scale it back a little, but not too much! My husband couldn't stop raving about it. Thanks so much for the easy, simple, and delicious recipe! Can't wait to share this with others.

We love this recipe! I am not a big cole slaw fan either. It is great with an easy meal of tostadas topped with refried beans & cheese melted on top after a few minutes in the oven. Top it with this cole slaw and it is hard to stop eating them! If you don't want it too spicy then go easy on the Chipotle pepper. I keep the leftover pepper in a container in my fridge for the next several times, a small can goes a long ways.

I live in Los Angeles County. Married 25 years. 3 kids ages 24, 21 and 12. I'm a math professor and a computer tech. The picture above is me running in the Los Angeles Marathon (the first time I did it) on March 4, 2007. I'm smiling because the picture was taken at mile 3. I wasn't smiling by the end. LOL. I've since done the Long Beach Marathon in Oct. 2007 and I did L.A. again in March 2008. The third time was the trick. I finally had a good race and I qualified to run the Boston Marathon which I did in April 2009. Now I'm into triathlon, since summer 2009.
Besides cooking/baking I've recently started knitting again (Jan. 2008) and can be found at Ravelry.com most days.
