Spicy Cold Soba Noodles

ingredients
- 1⁄3 cup soy sauce
- 1⁄2 teaspoon molasses
- 1⁄4 cup sesame oil
- 1⁄4 cup tahini
- 1⁄4 cup brown sugar
- 1 tablespoon chili oil
- 3 tablespoons balsamic vinegar or 3 tablespoons red wine vinegar
- 1⁄2 bunch sliced green onion
- salt
- 1⁄2 lb soba noodles (Japanese -Buckwheat noodles)
directions
- Heat soy sauce until reduced by half.
- Turn to low and add molasses.
- Warm briefly and transfer to bowl.
- Add remaining ingredients except noodles.
- Add salt to taste.
- Boil noodles about 3 minutes.
- Drain and plunge in ice water.
- Drain and rinse.
- Combine with sauce and chill.

Delicious!! I did cut down the sesame oil by about half (trying to watch my fat intake) and didn't miss it at all. I added some chopped red pepper for color, as well as some sesame seeds for crunch. I found that the amount of sauce was enough for a whole pound of soba. Fantastic and very simple dish, one I will definitely make again! Thanks for posting!!

Yummy and my friends enjoyed it. But I think the amount of sesame oil is too high. I used 1 tblsp and it seemed enough to me. I tried it both with tahini and peanut butter. I prefer tahini and it mixed in better. I had to heat the sauce in the microwave to get the peanut butter to mix in with the sauce properly. Very good though!

This is just terrific! I had to cut the chili oil waaay down - she is very sensitive to all things hot. What is most interesting is the use of tahini instead of peanut butter - that really intensifies the sesame taste. Had to make a substitution or two, no soba in the house, so used about 4 oz. of Chinese noodles + 4 oz. angel hair. It was still fine so the recipe works even if you don't have absolutely all the ingredients. Happy slurping!
