Spicy Cranberry Chicken

- 8 boneless skinless chicken breasts (or a mix of thigh's and breasts trimmed of fat)
- 1 1⁄2 cups onions, chopped
- 1 (16 ounce) can whole cranberry sauce
- 1⁄2 teaspoon garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon fresh ginger, grated
- 1 tablespoon Dijon mustard
- cooking spray
directions
- Brown the chicken breast lightly in a skillet coated with cooking spray and place it in the crock pot.
- Sprinkle the thighs with the onions.
- Mix all of the other ingredients and pour the mixture over the chicken. Cover the crackpot and cook on low for seven to nine hours.
