Spicy Dill Mayo Salmon (South Beach Diet Friendly)

"Spicy Dijon and Mayo with Dill. Try with different types of fish (or shrimp, chicken, etc.) I used low-fat mayonnaise to make it South Beach Diet friendly. Note: for a quicker recipe nix the thyme, oregano, basil, even garlic. Note: for a better presentation, hold dill until the end and sprinkle over the top rather than mixing into sauce. Note: I've used regular jarred spices rather than fresh and they work just fine."

  • Preheat oven to 375°F.
  • Stir together mayonnaise and mustard.
  • Add spices (withhold dill and sprinkle on top later for a more professional presentation).
  • Arrange salmon on a baking sheet or pan.
  • Coat with sauce (add dill here if you've withheld it).
  • Bake for 30-40 minutes (salmon flakes when done).
  • Optional: When serving, spoon remaining sauce back over fish for a saucier version.

  1. Taste amazing! There weren't many reviews so i was a little nervous trying it out, but I am very glad i did. I wouldn't change a think as the one review said. also i saved the extra sauce and put it on at the end before i served it with fresh dill as recommended and it real closed the deal, Thank you very my wife was craving salmon in a dill sauce just like we had had out a few nights before at a nice restaurant, this did the job nicely!

We like incorporating a lot of spice and experimenting with rare or exotic ingredients.</p> <p>But we enjoy our wine (we keep a journal) and time together as we cook.&nbsp; When time allows, we will enjoy a nice after-dinner drink (tailored to our dessert choice of course), usually a spicy sipping rum like Zaya or Zacapa or a glass of cognac or tawny port.&nbsp; So we enjoy experimenting with desserts to suit or incorporate various spirits or dessert wines.&nbsp; And trying to find some healthy options so we can enjoy our wine or *****tail with a little less guilt!&nbsp;</p> <p>But we do love to indulge!&nbsp; And love entertaining family and friends to sample new creations or enjoy some our famous concontions.&nbsp;</p> <p>Currently, I am experimenting with creating a recipe list that incorporates the philosophy of the best facets of different diet plans while maximizing the benefits of combining the nutritional content of the foods with the health benefits of various spices in order to create nutritionally balanced meals.&nbsp; Just for fun and some interested friends.&nbsp; I'll create a recipe list when I have made more progress.</p>
