Spicy Garlic Shrimp and Tomato Spaghetti

  • In a small skillet, cook the bread crumbs in 1 tablespoon of the olive oil over moderate heat, stirring occasionally, until golden and crisp, 2 to 3 minutes. Scrape the bread crumbs onto a plate.
  • In a large pot of boiling salted water, cook the spaghetti until just barely al dente. Drain the spaghetti, reserving 1/2 cup of the cooking water.
  • Meanwhile, in a large, deep skillet, combine the remaining 1/4 cup of olive oil with the shrimp, tomatoes, garlic, rosemary and crushed red pepper. Add the spaghetti and the reserved cooking water to the skillet and season with salt and pepper. Cook over moderately high heat, tossing the pasta and lightly crushing the tomatoes, until the sauce is slightly thickened and the shrimp are cooked through, about 4 minutes.
  • Transfer the spaghetti to bowls, sprinkle the bread crumbs on top and serve.

  1. This was only OK for me (because it was rather bland tasting), but the rest of my family thought it was pretty good. The only trouble I had in cooking it was that crushing the tomatoes in the pan just caused them to squirt all over the counter. So if I make this again, I'll slice the tomatoes in half lengthwise before cooking (and avoid the extra clean-up).
     
  2. This is wthout a doubt the easiest and quickest from scratch pasta ever. I made a single serving and I thought that the 4 ozs made a too generous serving for one ( but that is just my opinion). The local store didn't have any small tomatoes so I cut a regular one into pieces about the size of grape tomatoe's but they cooked down very quickly so the size didn't much matter in the end. I really loved the crumbs in this and was quite pleased at the added texture and taste that they added. I used 1/2 the ask for pepper flakes and that was just right for me. Since I had small shrimp to start with I didn't chop them but used them whole. I topped mine with Parm just because I wanted too, lol. Made for Photo Tag
     
  3. This is a delicious, light shrimp pasta sauce. Used whole wheat pasta and finished with parmesan chesse. Nice spicy bite from the red pepper and depth from the rosemary. Served with a spinach salad.
     
  4. My DH and I had this tonight and it was knock your socks off! I admit that I tried to remember to save the 1/2 cup pasta water, but totally forgot, so used 1/2 cup chicken stock. I thought I had freshmary, could I find it, a big FAT no! So used dried. Overall, my picky DH was quite satisfied, so I"m satisfied. (I overrule him anyway since I'm the typist!) Made for 123 Hit Wonders Tag.
     
  5. this was good but the rosemary amount was just too overpowering for out taste, I increased the fresh garlic and added in a heaping teaspoon crushed red pepper flakes, it's a great shrimp recipe and I will make again but reduce the rosemary, thanks Marra!

I have chronic medication resistant depression after 10 years on anti depressants that worked well but would stop working after a year or two, so now do my best at home living on disabilty. Not a bad thing, many have far worse health issues but i have been able to concentrate on food/cooking. My main passions are my cats. I live in the woods and somehow many starving strays or "dumps" have found the message babies who passed on left in the woods saying "suck lives at xxxx road. Most arrive sick and/or starving. Right now i have 2 that arrived with feline herpes and their attendant 2ndry bacterial infections but are doing beautifully. One old man who was going to be euthanized bc a lady who found him as a stray was moving and didnt want him...well he was a biter and rather grumpy who was in ICU for 3 days with a deadly gut infection which was fixed but he left with a diagnosis of diabetes. 3 months on insulin and finally diet controlled and he caught the herpes virus, respiratory symptom version and turned into a cuddler. Butterscotch must think "why didnt i figure out this cuddle stuff was great before i got sick!" Doing wonderfully even though he has bouts. he and the other kids are my babies. Sadly Butterscotch died of Lymphatic cancer in winter of 2008. A year before Big Boy arrived in my life, starving and weak. Full of affection he jumped into my arms and stayed, turns out he has FIV (cat hiv) so he needs to be watched closely.
