Spicy Orange Chicken With Vegetables

  • 1 lb chicken breast, boneless & skinless, cut into strips
  • 12 cup asian sesame dressing
  • 14 cup orange juice
  • 12 red pepper, sliced
  • 12 green pepper, sliced
  • 12 white onion, sliced
  • 12 cup sliced mushrooms
  • 12 cup pea pods
  • 3 cups hot cooked rice
  • 14 cup peanuts, chopped

directions

  • Heat large nonstick skillet over medium-high heat, add chicken; stir-fry 5 to 7 minutes, or until done.
  • Remove chicken, add dressing and orange juice to skillet. Bring to a boil, add vegetables; cook 10 minutes, or until crisp-tender.
  • Return chicken to pan, toss well.
  • Serve over cooked rice or noodles sprinkled with peanuts.

  1. Yumm!! What a great recipe! Nice to simmer the vegetables in the orange juice sauce rather than more oil. Great taste! I added just a smidgeon of chili garlic oil (1/2 tsp.) to give it some heat but it was so awesome. DH loved it. I'm sure we'll be making this again soon. (Used chopped cashews on top as a garnish 'cuz that's what I had.) Delicious!

I put in broccoli and cauliflower instead of mushroms and pea pods and used rice vermicelli instead of rice since I had some leftover and just mixed it right into the dish so it could soak up the sauce. We liked it as is, but LOVED it when we added some sriracha hot sauce to it. Made for PAC Spring '10.
