Spicy Peanut Pork

ingredients
- 4 boneless pork chops, well trimmed
- salt and pepper
- 4 -6 green onions, cut in 1 inch diagonal slices
- 8 ounces snow peas, strings removed
- 1 tablespoon fresh ginger, minced
- 3 garlic cloves, crushed and minced
- 1⁄4 cup creamy peanut butter
- 1 tablespoon sugar
- 1 tablespoon soy sauce (I use Tamari)
- 1⁄8 teaspoon cayenne pepper
directions
- Cook seasoned pork approx 4 minutes on each side in lightly greased saute pan.
- Transfer pork to platter, keep warm.
- In same skillet add green onions and snow peas, saute for 2 to 3 minutes. Stir in garlic and ginger, cook 1 minute.
- Return pork to pan. Meanwhile mix remainder of ingredients in bowl with 3/4 cup water (or stock). Pour mixture in skillet, heat until boil.
- Serve with steamed rice.

Made for Fall PAC '07. This will most definitely be in my list of recipes to make on a regular basis. It was great, the only thing I did different was to cut the pork up in to bite-size pieces. My DD has braces and cutting meat up like this prior to cooking makes it easier for her to eat. Anyway.......thanks Katie for the great recipe!
