Spicy Pork Chop Casserole

  • Preheat oven to 375 degrees.
  • Lightly spray nonstick skillet with cooking spray.
  • Add corn, cook over medium high heat for 5 minutes or until corn begins to brown.
  • Add potatoes, cook and stir for 5 more minutes or until potatoes begin to brown.
  • Add tomatoes, chili powder, oregano, cumin and red pepper; stir until well mixed.
  • Lightly spray 8x8x2 baking dish with cooking spray. Pour corn mixture into dish.
  • Add oil and pork chops to skillet. Cook pork chops over medium-high heat until brown on one side.
  • Remove pork chops and place browned side up on top of corn mixture.
  • Sprinkle with pepper.
  • Bake uncovered 20 minutes or until meat is barely pink in center.
  • Sprinkle with cheese.
  • Let stand 2-3 minutes.

  1. What a terrific dish! We loved it! I didn't have frozen hash browns, so I used some pre-boiled russets that I diced. I also used more than 1 tsp. olive oil for browning the chops. Any that was left in the skillet I just poured over the casserole and put in the oven to bake. Also I didn't have monterey jack cheese, but cheddar was a fine substitute. This tastes so good; the potatoes took on a great smoky taste from the spices. The chops were tender and full of flavor. (I put garlic salt on my chops before sauteeing.) We enjoyed this dinner on a cold, rainy night with crusty bread and salad. Deeeeelicious!
     
  2. With a houseful of young people last night, I was looking for something filling & inexpensive, but good. And this is. Not an exciting recipe, just very good comfort food. I used boneless pork ribs, cut into chunks (what I had on hand) and added some garlic to them. I also added diced green pepper for a little color, and cut the amount of chili powder by half (because my family isn't crazy about it) - but I would use the full amount next time and also add a little salt. We enjoyed it (and finished off the leftovers for breakfast) and definitely plan on making it a lot - thank you.
     
  3. What a taste sensation!! Who would have thought to mix the very definition of comfort food ( pork chops, taters, corn ) together in one pan?? Very easy to put together. I was leary of putting cheese on pork chops but, OMG it was fantastic. Next time I am adding more cheese. I might even put some on the veggies before adding the chops.

I am the mother of two girls and the grandmother of one girl, all of whom are very beautiful!! I love cooking and have been in the kitchen for most of my life. Spent the first few years watching, helping and learning from my dad and his mother, both were very talented cooks. Wish I'd paid more attention, because my Daddy made chili to die for, and my southern Grandma made the best biscuits in the world...and something with tomatoes and breakfast sausage links over rice....Oh geez, I wish I could remember! I started baking Christmas cookies a few years back because I didn't know much about baking and wanted to be a well rounded cook (and let me tell you the cookies can make one well rounded, lol). Now, if I were to stop, I think I would be lynched, lol. My favorite person to cook for is my oldest daughter because she is willing to try ANYTHING!!!!
