Spicy Potato Soup

- 1 lb Italian sausage
- 1⁄2 onion, diced
- 2 stalks celery, chopped
- 4 large potatoes, peeled and cubed
- 6 cups chicken stock
- 1 quart heavy cream
directions
- Brown italian sausage and drain, set aside to cool.
- Sautee the onions and celery in some butter until the onions start to become clear and soft.
- Combine the sausage, onions/celery, and potatoes in a large pot, cook for 10 minutes until potatoes begin to brown.
- Pour in all of the chicken stock, bring to a boil, and cook until the potatoes are fork tender.
- Remove from heat, and SLOWLY add the cream, stirring constantly to prevent scorching. Return to medium heat until soup is warmed.

Well I was a little disappointed in this recipe as it's name indicated it was Spicy, which for us it was not. In fact we thought it was a little bland and had a lot of soup juice that didn't really match the meat and potatoes ratio in our opinion. I used fat free half and half which might have contributed to the bland taste, but is what I ususally use in this type of soup these days as we get older. It is a soup I can work with though and will make again and experiment with. Thanks for sharing. Make for PAC Spring 2012
