  1. Place pork and onion in slow cooker. Place cherries, ketchup, vinegar, brown sugar, espresso powder, pepper flakes, cinnamon and garlic powder in a food processor or blender. Pulse to coarsely chop cherries.
  2. Pour sauce over pork. Cover and cook 8 hours on low or 4 hours on high. Uncover cooker and use 2 forks to shred pork. Stir to combine with sauce. Recover and keep warm. Serve on sandwich rolls.
