Ingredients Nutrition

  • 14.79 ml olive oil
  • 1 large onion, finely chopped
  • 2 medium red chilies, deseeded and chopped
  • 9.85 ml coriander seeds, crushed
  • 750 g pumpkin, peeled and chopped
  • 2 medium potatoes, peeled and chopped
  • 1700.00 ml vegetable stock

Directions

  1. Heat the oil in a large pan and saute the onion over a low heat for around 10 mins until soft. Add the chopped chillies and crushed coriander seeds to the pan and cook for 1-2 minutes.
  2. Add pumpkin and potatoes and cook for a further 5 minutes Add the stock, season, the cover and bring to the boil. Simmer gently for 15 mins or until the vegetables are soft.
  3. Whiz the soup with a blender until smooth. Reheat to serve.
