Spicy Red Lentil Soup

  • Heat oil in sauce pot and saute garlic and onion.
  • Add stock and heat to a simmer.
  • Add lentils, artichokes, tomatoes, chile, adobo sauce (add 1 or 2 t, depending on how spicy you like things), brown sugar, and chocolate.
  • Season to taste with salt and pepper.
  • Simmer covered for 15 minutes.
  • Adjust seasoning to taste with salt and pepper.
  • Pour into serving bowl and stir in yogurt (or sour cream, whatever you prefer to cut the heat).
  • Sprinkle with basil or oregano (something green to look nice:)).
  • I like to eat this with sesame chips.

I am a medical student and I love road biking. 4/29/2009 - Wow, I just got picked as chef of the day and realized how boring my page is! For anyone who is interested, I got married last fall and the husband loves this website too, because it gets him fed amazing meals!! I am about to graduate med school (1 day left, crazy!) I will then be headed to Omaha for internal medicine residency. I can't say I will have much more time to post recipes and reviews, but as cooking is my stress reliever, I will be relying heavily on Zaar. Thanks for everyone's great recipes!!
