Spicy Sausage Alfredo

directions

  • heat oil in large skillet; add sausage cook on med high.
  • while sausage is cooking, start pasta water
  • chop onions and peppers into 1/4 inch slices set aside.
  • when sausage is browned and thoroughly cooked, add fresh peppers and onions; cook just until veggies are hot; turn skillet down low.
  • when pasta water is done add pasta cook until al dente.
  • drain pasta water; reserve 1 cup of the water to thin sauce.
  • in medium saucepan, heat 1 jar of alfredo sauce to a low simmer while stirring occasionally.
  • add 1/4 cup Red Hot sauce alredo; stir until mixed.
  • pour pasta into skillet with sausage pepper mix.
  • pour alfredo sauce mixture into the skillet and toss togther.
  • add pasta water to thin sauce (if preferred).garnish with parmesan and serve.

  1. This was easy and tasty! I have a very finicky 20 yr old son with Asperger's Syndrome and who questions every food put in front of him and he enjoyed it too. I felt that it served 6 when paired with a tossed green salad. I used mild Italian link sausages and was slightly aprehensive about the amount of hot sauce. But I risked it and used the recipe amount of 1/4 c. and it was just the right degree of spicy for our family. My son said he'd eat it again so this recipe is going into rotation. A nice budget meal! Thanks!
