  • Rub entire rib roast with rub mix.
  • Smoke roast over indirect heat for 3-4 hours at 200-250 degrees or until meat thermometer reads 140 degrees (for medium rare) or longer if you prefer your meat more done.
  • 3/4 way thru cooking you can sprinkle meat with crushed rosemary leaves if desired.

  2. This is the best prime rib my family has ever tasted. It was so easy to prepare. I didn't have onion powder, so I used garlic powder and it was great. It wasn't too spicy for my kids to eat like I was concerned about. I used soaked hickory chips to add to the smokey flavor. Great recipe. I'll use this many more times, I'm sure.
     
  3. My first rib roast and now I never have to go out to get prime rib. I used a 4 lb roast and cooked it for 3 1/2 hours @ 200 and it came out between medium rare and medium. Perfect! Will use this recipe again and again. PS: I used spiced cherry wood. Update: I just cooked a 6.6 lbs. ribeye roast @ 200 for 5 hours and it was perfectly pink all the way through.
