  1. Preheat oven to 500 degrees F.
  2. Peel potatoes and halve lengthwise, then cut each half lengthwise into 4 wedges. Place oil, salt and spices in ziptop bag and squish to combine. Add potatoes and toss to coat. Place potatoes in shallow baking pan and roast in lower third of oven, turning over halfway through roasting, until tender and browned, 15 - 20 minutes total.
