1. I LOVE DanDan noodles. LOVE. I know when it's done right and when it's done wrong. I carefully read through all the different recipies and chose this one, as it seemed the most comprehensive. After carefully following the recipe (well adding a bit more "heat" by doubling the amount of red chilli flakes), the most delicious, spicy, savory dish was devoured in minutes by both myself and my fiance. Servs 3 - 4 ... me thinks not!! Not in this household honey!! Hahaha ;P Bottom line, awesome recipe.

 2. OMG This is good! DH had three helpings and finished the entire dish. I used spicy Bob Evans pork and it was sooooo good. Did add sugar snap peas just because I had them. Will make this one many, many times.

 3. Great! I only used 8 oz. of noodles, but you definitely need 12 oz.

 4. I didn't bother to make the meat mixture-I just splashed some soy sauce on the pork as it was cooking. I used ramen noodles and mixed it all together before serving. This will be added to our favourites-insanely easy, fast, we usually have all the ingredients in the house, and it ended up being a super cheap meal.

Thanks for the recipe!

I am a clinical psychologist, mother of two almost grown children and descend from a long line of wonderful cooks on my mother's side of the family. One of my ten aunts on the italian side of my family is Marie, a prolific contributor to recipezaar, and her cooking puts mine to shame!

Nonetheless, I want to share the recipes I enjoy and post them for others to try as well. I am an avid reader of cooking articles, books and magazines, so many of my recipes have origins in Cook's Illustrated or other notable sources. Others are things I have made from my own exposure to the wonderful italian cooking in my family or the cooking of friends in college, grad school and other venues of my life.
