  • In a large saucepan, saute onion and garlic until translucent.
  • Add rest of ingredients except for the sour cream. Mix well. Bring to a boil, then reduce heat and simmer for 20 minutes. Put soup into bowls and top with sour cream.

  1. My husband and I both loved this soup!! Perfect amount of spice for my tastes. I followed the recipe as stated but used one 14.5 oz. can of tomatoes instead of fresh. I used V8 low sodium vegetable juice and it was perfect. Great soup, very easy and quick to make. Thanks for posting!!

I am a vegetarian of 5 years and am always looking for new and wonderful recipes. I have 4 kids 2 of which are veggies like me.
