- 2 cups whole wheat pasta, cooked
- 2 tablespoons goat cheese
- 1 (15 ounce) can artichokes
- 2 garlic cloves, minced
- 1⁄2 lemon, juice of
- 1⁄2 lemon zest
- 2 cups spinach
- 1 teaspoon basil
- 1 teaspoon oregano
- salt & pepper
directions
- Cook pasta according to package, reserve 2 tablespoons water.
- Heat garlic in skillet over low for 2 minutes. Add artichoke and spinach until wilted.
- Add pasta, lemon juice and zest, spices, cheese, and pasta water. Cook until cheese melts and sauce thickens.
