Spinach and Cheese Mashed Potatoes

"An Amish dish that is America's Midwestern comfort food at its very best. BF made this for supper with a few low fat substitutions and extra cheese:D Oh so fluffy potatoes with a chewy cheese crust.   • Preheat oven to 400 degrees Fahrenheit.
  • Peel and cook potatoes (slice 1/2-3/4 inch thick and boil for about 15 minutes) and put through ricer.
  • Add salt, pepper, yogurt or sour cream, milk and butter (if using) to potatoes. Beat well until fluffy.
  • Fold in spinach, chives and dill (if using).
  • Place in lightly greased 8x8 casserole dish or loaf dish, top with cheddar cheese and bake 25-30 minutes or until cheese is browned.
  • Recipe can be prepared a day ahead before final bake.

  1. I%u2019ve made this several times, always omitting the chives as a personal preference. My family likes them better with the cheese just stirred into the potatoes. We find baking overcooks the spinach and leads to a slightly bitter taste. When using fresh spinach, I barely wilt it in a little bit of bacon grease before mixing it with the potatoes %u2013 YUMMO!
     
  2. Very good, 2Bleau! The whole family loved it! I've actually made it twice now. I did make two changes: I cheated and used 2 pkgs. of Idahoan Mashed Potatoes (prepared). I also used 1 T. Basil instead of 2 T. chives. Still turned out excellent! Thanks a bunch! BeanieJ

  4. What a totally different take on mashed potatoes! We enjoyed this quite a bit. I ran into a timing snafu and didn't have time to bake the full 25-30 minutes, so I loaded the potatoes into the dish while still hot and placed the whole thing under the broiler to brown the cheese. I really loved the pepper in this, and next time I will probably omit the dill (couldn't really taste it) and increase the chives as they added a nice fresh flavor. I am also tempted to try this with kale, as I think the texture would be a nice addition to the dish. Thanks for posting! Made for Veg*n Swap #9.
     
  5. Very good recipe with great flavour. Nice variation from regular mashed potatoes. Enjoyed the addition of the spinach and herbs. I normally just use yogurt in my mashed potatoes so I didn't add the milk or butter. Cut the salt & cheddar in 1/2 and it was perfect for us.

Zaar Chefs I have met so far: Elmotoo, justcallmeToni, ~Rita~, Midwest Maven, Bird&amp;Buddha (both of them) and most recently, Ms*Bindy from upstate New York:) Wonderful, sweet, friendly people and great chefs! Most relevant thing to mention here is that I am a vegetarian, and recently became a&nbsp;vegan&nbsp;(almost 100%). To put vegetables and other things not meat or fish on the table I work as an actuary (in my case anyway, a combination of statistician, number-cruncher and/or programmer). For fun I like to travel. Just came back from&nbsp;Namibia, a peaceful democracy in Africa with lots of animals! Got some terrific pictures of lions, leopards, cheetahs, elephants, rhinocerous, hyenas, all kinds of antelopes, giraffes and zebras. Namibia is the second most sparsely populated country per square mile, just behind Mongolia. Update:&nbsp; We went to Italy this Spring.&nbsp; We had lots of pizza and pasta.&nbsp; The pizza is so much better in Italy, particularly the crust.&nbsp; The Amalfi coast was absolutely beautiful.&nbsp; Spectacular natural scenery (Canada and Alaska are really beautiful, Patagonia in Chile is sublime, Iceland is unique) has been my latest passion as far as travel destinations but I have seen quite a few big cities too (Paris, Berlin, London and Madrid to name a few). On my bulletin board at work I keep a list of every country I've visited (other than the U.S. of course). So far I've made it to five continents: Europe, Africa, South America, Asia and North America of course. I've got only two other continents to conquer:) I don't usually have difficulty finding vegetarian dishes here in the U.S. or overseas, but finding vegan dishes is much harder. I have no kids, just cats, Kumquat, Cranberry, and more recently Quincy and Kiwi. They are purebreds, of the breed alley caticus (okay, American shorthair I guess). Our cats are not vegetarians, though my boyfriend (significant other, long-term partner, whatever) is. I am a friend of all animals both tamed and wild. In addition I am a freethinker and my boyfriend studies philosophy. Either way, we get along pretty well.&nbsp; Also, please allow me to say that my BF and I recently bought a condominium in NYC.:)&nbsp; Pet peeve?
