Spinach and Feta Omelet (Low Carb)

  • Crack the eggs into a bowl, add the sea salt and chopped onions and blend together with a wire whisk.
  • Melt 3 tablespoons of butter in a frying pan, and then add the egg mixture, tipping the pan to make sure the egg mixture covers the bottom of the pan.
  • Cook on medium heat, until the underside is lightly browned, and then add the spinach and the crumbled feta cheese.
  • Lift one side of the omelet with a spatula and fold it in half.
  • Reduce the heat, and cook until the inside of the omelet is cooked (less than a minute or so).
  • Use a spatula to slide the omelet onto a plate and serve!

  1. I love omelets for breakfast, dinner, anytime. This omelet turns out wonderfully. Spinach is one of my favorite ingredients in omelets, and the tanginess of the feta cheese was a wonderful addition to this omelet. I think a little seeded, chopped tomatoes would make a nice addition. Made for My-3-Chefs, Nov. 2009. Update: This recipe is in my Top Favorites of 2009 Cookbook.
     
  2. I liked this omlette. I think 4 eggs could be reduced. I added cooked mushrooms and sprinkled on some garlic powder. Didn't use salt. I don't think you need it with the garlic powder. Was a great late lunch.

Well, my real name is Brenda, and I am a stay at home mom of 3 boys (ages 6, 5, and 4) and 1 baby girl. I homeschool my boys during the day, and I enjoy cooking with them. I will post those here soon. :) I have a son who was born 3 months premature (26 weeks gestation) and is now too skiney (at 6 years old) and sensetive to the texture of his food. I always like finding high calorie foods that he will actually eat! In my "spare time" (ok, 1 night per week!), I design and maintain a website: SeriousMoms.com. I LOVE this site. I look forward to working on it every week. I've made several pages on my site that link to many Zaar recipes--like my Cupcakes page, and my Christmas Gift Ideas, and Recipes for Romantic Dates at Home. :) Lately, I've been enjoying "The Sneaky Chef" with my kids. It WORKS! :) They like all of the recipes so far!! For fun, I also enjoy scrapbooking. I'm currently working on my daughter's baby album. We love adoption! We've adopted 2 of our kids--Noah (3) and Ruby (our baby). It's not always easy, we have struggles (we didn't get Noah 'til he was 14 months, so he has a lot of anger built up in him), but we love it nonetheless.
