  • In a large skillet, melt butter over medium heat.
  • Saute eggs until scrambled.
  • Set aside and wipe skillet clean.
  • In skillet, heat oil over medium heat; saute bell pepper and onion for 3 minutes or until tender.
  • Add mushrooms, spinach, salt, and pepper; saute for 4 minutes or until spinach is wilted.
  • Place tortillas on a work surface.
  • Layer eggs and spinach mixture equally in center of each tortilla.
  • Top with cheese.
  • Fold both ends over filling then roll up; serve immediately.
