Directions

  1. Put on water for pasta and cook according to box directions.
  2. Meanwhile, heat olive oil in skillet and add crushed red pepper to your desired level of spiciness.
  3. Add garlic and saute just until fragrant, about 3 minutes.
  4. Add tomatoes and saute just until warm, about 3 additional minutes.
  5. Add spinach and cook until wilted.
  6. Season with salt, if desired.
  7. Combine cooked pasta with spinach and tomato mixture.
  8. Add grated cheese until melted. If mixture is too dry, add pasta water until it is at your desired level of moisture.
