Spinach, Bacon, and Avocado Salad

"I commandeered this recipe from a colleague after tasting it at a work party. The spinach/bacon/avocado combination is absolutely divine and can be vaguely healthy if turkey bacon is used!"

  • Prep spinach, bacon, avocado, and tomato/pine nuts/egg, if using. Place in a bowl, tossing together with two large spoons. Set aside.
  • Add remaining ingredients to a small bowl and beat together with a fork until thoroughly blended.
  • Alternatively, place ingredients in capped jar and shake vigorously until well-blended.
  • Pour dressing over salad and toss well to combine. Serve immediately after taking some for yourself, because this will go quick!

  1. We liked everything about this salad except that the dressing was too salty for us. I still think the recipe is worthy of 5 stars...I will simply cut back on the salt next time to suit our tastes.
     
  2. I thought this was very good! I think my dressing was a bit too bitter, which might have been because my garlic cloves were a little too large. I had to adjust the amount of oil. I took other reviewers advice and halved the salt. I also like a dijon in my dressing, so I added a teaspoon. All the ingredients went together well.
     
  3. You are right that the combination of spinach / avocado / bacon is divine! The dressing by itself is salty but tastes great with the salad ingredients. We will definitely be making this again. Thanks for the wonderful recipe!
     
  4. This could become one of my all time favorite meals! In short, it's a slad I'd reccomend to any/everyone, and would still enjoy preparing it for just simply yourself....cut in 1/2, mind you! during the last of the "summer" days...the leaves are already turning, somewhat due to the drought, and the "night bugs" are singing a different song. I could eat this for breakfast even! I love breakfast foods, but I also enjoy ANY food that's nutritious at any meal. This suits me fine!
     
  5. This was fantastic! We just had it for dinner, and it was perfect for 2 as a main dish. I left the dressing separate, and we ended up using about half. Really, really good - we'll definitely be making this again!
