Spinach Baked Tilapia

"I found this posted online and made it right away. This is sooooo easy to prepare and tastes DELICIOUS! Next time I make it, I'm going to toss in some minced garlic with the tomatoes, I believe. It had a bit too much liquid to it, but I just sprinkled some over the fish and enjoyed it."

  • 4 (4 -6 ounce) tilapia fillets (total of 1 pound)
  • cooking spray
  • 10 ounces Baby Spinach, cleaned
  • 14 cup chicken broth (I used flakes)
  • 14 teaspoon onion powder
  • salt and pepper
  • 3 teaspoons creole seasoning
  • 1 small tomatoes, chopped
  • 4 green onions, thinly sliced

directions

  • Spray a 9x13-inch baking dish with cooking spray and add the spinach. If necessary to make the spinach fit it into the baking dish, steam or saute the spinach for a minute or two to wilt slightly.
  • Sprinkle spinach with salt and pepper and onion powder; add the chicken broth.
  • Sprinkle tilapia filets lightly with salt, pepper, and Creole seasonings. Arrange the filets over the spinach and sprinkle with chopped tomato and sliced green onion. Cover the baking dish with foil and bake at 350° for 25 minutes, or until fish flakes easily with a fork.
  • Serves 4.

  1. this was delicious and I didn't even have the creole seasonings! I am on no added salt and so I used a very low sodium chicken broth and garlic powder instead of the creole seasoning and onion powder. It was so fresh tasting! Loved it. Will make it lots.
     
  2. This was really a great recipe! I changed a few things because we like spice. Substitute a can of Rotel tomatoes for the tomato/onion, cook at 400 degrees for 25/30 minutes (350 seemed to take too long in our oven), and top with some shredded cheese after you take it out of the oven and let it melt before serving. The whole family loved it!

  3. This was sooo easy and so good! DH was home for lunch, so I looked this up at noon and we were eating by 12:45. I didn't have Creole seasoning or fresh tomatoes so I used Emeril's Original Essence and canned diced tomatoes. Our 2 and 4 year old daughters even liked it!
     
  4. Tasty dish.. and I love the small amount of calories and fat! I only gave it 4 stars because I didn't have any creole seasoning which I think would have added just the right amount of kick.
     
  5. This is the one of the easiest, tastiest recipes ever. I loved it, didn't have creole seasoning either but it turned out great. Can't wait to make it for my friends!

I'm a 32 year old mommy to an amazing 8 year old boy, Aidan. We live in WV, and moved in with my parents after my divorce and some health problems. In the photo with me are my dad and my son. We're raising two cute kitty cats, Pete and Polly, who have very opposite personalities. Both were rescues. Polly is 4 months old and Pete is a year and 1/2. I'm battling an eating disorder that I've had for almost 13 years now. My highest weight was 220lbs and my lowest was 76. Neither were healthy, so now, my cooking reflects a desire to avoid those weights. Eventually, I hope to work with people who struggle with eating disorders. I have my BA in Psychology. I'm not employed right now, due to a couple of seizures, but I'm getting very antsy and ready to get back out to earn my keep. For now, earning my keep is pretty much cleaning and cooking. My son is sooooooooooooooo healthy and loves fruits and veggies, so he's fun to feed! He's a smart kid too and gets in trouble in school as a result. haha! When he grows up, he's going to be a chef, he says, and we watch Take Home Chef together. I'm addicted to zaar and try to choose new recipes weekly.
