Spinach Balls

"I got these off of Allrecipes. I haven't tried them yet but they sound good. I am going to add them to my Christmas buffet. They look like they could be made ahead and frozen, and that would be a big time saver during the Holidays! So with the Holidays coming I thought I would share!"

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl combine spinach, stuffing mix, Parmesan cheese, garlic powder, black pepper, Italian seasoning, cayenne, melted butter and eggs.
  • Shape into walnut-sized balls and place on a baking sheet.
  • Bake in preheated oven for 20 minutes, or until heated through and browned.

  1. My sisters and I have been making these for parties for years and serving with a Dijon-style mustard for dipping. Yes,they do freeze well; but my recipe says "2 10-oz packages of spinach," "1 cup of Parmesan" and also calls for 4 small green onions.I'm thinking you can play with proportions. Everyone should try these!

  3. These were good, everyone thought they had sausage in them! But followed recipe exactly except used the fresh spinach I had on hand. Cayenne was a good addition, and this would be great dipped in sauce. They stayed good in the fridge and just microwaved them or ate cold.
     
  4. Sorry Little Bee, these just didn't work for us. Dh really didn't care for them and I threw out the leftovers. I followed the recipe exactly, but had to add more crushed bread mix and parm cheese because I had trouble forming the balls with the recipe as is as they wouldn't stay together. I rolled them into balls and put them in the freezer and then baked them on a baking stone just before serving. They baked very quickly. Sorry,I won't be making these again, but I really did have high hopes!
     
  5. These are a wonderful addition to many meals (I make them a little bigger as a side dish) and make an awesome appetizer too!They're definitely going to be part of my Christmas finger food menu. Try them, Little Bee! You'll like 'em!
