“A local diner makes this really awesome spinach bread that's sort of like challah or brioche but with this yummy spinach and cheese filling. experiment didn't turn out quite like the diner bread, but I like it better because I can make an entire loaf at home in the comfort of my own kitchen with the laziness of my bread machine and food processor! Plus, I get to use fresh spinach which I think is optimal to the frozen kind the diner uses but that'll do if you don't have fresh. This makes a nice big loaf!”

Ingredients Nutrition


  1. Put the dough ingredients into your bread machine according to manufacturer's instructions, set on a 2-lb dough cycle.
  2. While the dough cycle is doing its thing, make the filling by putting the filling ingredients into a food processor and let chop until you have a fully blended mixture and refridgerate until the dough cycle is done.
  3. When the dough cycle finishes, roll the dough out onto a silpat or other clean surface into a big flat rectangle.
  4. Spread the spinach filling evenly throughout the middle of the dough length-wise, then close the dough over the filling until you can't see that there IS filling in there. Then, transport to a cookie sheet or jelly roll pan covered in parchment paper.
  5. Beat an egg well in a small bowl, and brush with the egg. Add sesame and/or poppy seeds if you like.
  6. Run a knife under some warm water and make a few horizontal slashes on top.
  7. Bake at 350F for 30-35 minutes or until a deep golden brown.
