  1. Hi, I just have a comment. I submitted this recipe, perhaps 20 years ago, on a recipe sharing site and have watched it pop up in various sites since then. I first saw it in 1991 in a fabulous cookbook called Creme de Colorado published by the Junior League of Denver, Incorporated.I just wanted to put that out there since it is originally published in this cookbook. This recipe has been a hit in our family for decades. Someone asks for the recipe every time!

  1. Long time family favorite here...I hate mushrooms so I know it's great without those. You might also try pepper jack cheese and/or adding pickled jalapeños. It adds a little more of a kick. Also most recipes call for paprika to be sprinkled on the top...which is awesome IMO.
     
  2. I love this recipe! It is so versatile! Just the way it is is fabulous however there is room to add meat if you wish. Shrimp, chicken, even ground beef would make this a complete casserole for my meat loving family. I also will be making it with different kinds of veggies sometimes, as spinach isn't a "favorite" in my home. I am so glad I came across this recipe. I made it for a potluck and doubled it. I also used a whole pound of pasta, then doubled the recipe. Turned out perfect and it was GONE!! So happy! Thank you!

  4. This is for those who enjoy rich dishes. I mixed everything together except for the pasta and it came to 8 cups. There was no way that only 9 ounces of spagetti was going to be enough. I used 1 pound pasta. This is a very rich dish. I didn`t plan anything with this. But a large salad would do you good. This is very easy to make. Just be sure to cut back on the sour cream, cheese, and butter!
     
  5. Great! Served this as a side at family Easter gathering. I one-and-a-halfed the recipe which would have called for 6 cups of the cheese. I quit adding after 3 cups since I was afraid it would become "Cheese Cabrini!" Turned out wonderful anyway. Big hit with hungry relatives with several requests for the recipe. Thanks!

<P>I'm a Mom of three boys: 19, 16, 13 (Josh, Jake and Jonah) and a 1 yr old golden retriever-Jethro. I work full-time as a Medicare compliance analyst for a non-profit health insurer. I love to cook - although I don't always have enough time to do as I'd like to do. I don't especially care to do the clean up though- but who does?? Food in general brings people together and makes people feel at ease. My boys love to help out in the kitchen-especially if I'm baking bread or baking sweet treats for them. If anyone were to ask them what I put in a recipe - first two ingredients they'd list would be olive oil and garlic -- (well not for the sweet stuff..at least)! I'm constantly browsing to see how I can alter/influence my family's eating - as well as trying to get it on the table quickly! My boys are all hockey players - so I spend a lot of time at the ice arena. When I have time of my own..I try to get on the golf course or read cookbooks.</P>
