- 1 tablespoon dry breadcrumbs
- 3⁄4 cup shredded cheddar cheese (divided)
- 1 (10 ounce) package frozen chopped spinach, thawed & squeezed dry
- 1⁄4 cup finely chopped red bell pepper
- 1 1⁄2 cups egg substitute
- 3⁄4 cup milk
- 2 tablespoons grated parmesan cheese
- 1⁄2 teaspoon dried onion flakes
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon garlic powder
- 1⁄4 teaspoon pepper
directions
- Sprinkle bread crumbs evenly into a 8 inches sq. baking dish coated with nonstick cooking spray. Top with 1/2°C cheese,spinach & bell pepper. In a small bowl combine the remaining ingredients; pour over top.
- Bake uncovered at 350 deg. for 35 minutes Sprinkle with remaining cheese. Bake 2-3 minutes longer till cheese melts or untill a knife inserted near the center comes out clean. Let stand for 15 minutes before cutting.

Greetings from God's country, the beautiful state of Oregon. We have very cold winters here so I stay indoors & cook alot in the winter months. I love trying out new recipes. Thankfully my dear husband is game for anything, he'll eat it even if it turns out bad. Like the chicken & dumplings that turned out to be chicken & dumpling soup!!!
