  • Cook noodles according to package directions; drain.
  • In a bowl, combine eggs, spinach, cheeses, salt, pepper, and nutmeg.
  • Spread 1/3 cup cheese mixture over each noodle; carefully roll up.
  • Pour 1 cup spaghetti sauce into an ungreased 13x9 baking dish.
  • Place roll-ups seam side down over sauce.
  • Top with remaining sauce.
  • Bake 20-25 minutes at 375 degrees.

  1. Delicious as is, and if you have GERD as my honey does, then sauteing the garlic and onions before including in the recipe si the smart thing to do, and tastes delicious as well. Thank you for knowing that sauted onion and garlic, or any veggie, makesthe preparation so much easier, and also creates a dish which blends many flavors and does not have too much crunch of any one ingreadient. Beautiful:)
     
  2. I gave this recipe 4 stars. I helped make these in my newphews & my cooking class Cooking With Your Kids. I really enjoyed these roll ups. I thought they would taste great with sausage added in the cheese mix. My 5 yr old newphew did not like these. My copy of this recipe is slightly different. My copy calls for 1/3 c onion-chopped fine, 2 cloves garlic-minced, 1 tsp olive oil, 1 c ricotta, 1 egg, 1/2 tsp salt, 1/2 tsp pepper, 1/2 tsp italian seasoning, 1/4 c fresh parsley-chopped fine (we used dried), 32oz marinara or spaghetti sauce, 1 c shredded mozzarella. My copy does not call for ground nutmeg. The rest of the ingredients is the same. The directions say to saute the onion and garlic in oil 5 minutes (we add them unsauted to the ricotta). Mix all filling mix together. Spread 2-3 tbl of cheese mix on each noodle. Sprinkle rolls with mozzarella (we added the mozzarella to the ricotta). We sprinkled our rolls with parmesan. Bake for 30 minutes. The rest is the same. Overall I think these were so good and I will have them again. Thanks for posting a yummy recipe! Christine (internetnut)
     
  3. No harder to put together than a flat lasagna, but it looks like a lot more fun to the kids. This was the recipe that let me slip the spinach in under DS's nose. He was just sure he would never eat spinach until I told him that it was the main ingredient in these tasty rollups! The only change I made was to use cottage cheese instead of ricotta (pers pref). I used a jar of Classico brand pasta sauce in the carmelized onion & roasted garlic flavor. Ever since making this recipe DS is more than happy to try anything I make with spinach. Thanks for posting this recipe, knitaholic! I had forgotten about it & now can't wait to make it again.
