  1. Drain spinach well, pressing between paper towels.
  2. Saute spinach and mushrooms in a large skillet 5 min or until tender.
  3. Stir in cilantro and salt.
  4. Spread spinach mixture evenly on half of each tortilla.
  5. Sprinkle with cheese blend.
  6. Wipe skillet clean.
  7. Cook, tortilla side down, over med-high heat until lightly browned.
  8. Fold tortilla over filling and serve immediately.
