ingredients
- 1 bag Baby Spinach
- 1 medium onion, minced
- 3 tablespoons oil
- 2 tablespoons brown sugar
directions
- Saute' the minced onion in the oil until tender and slightly brown.
- Remove from heat and add the brown sugar.
- Mix together well.
- Pour dressing over the baby spinach and toss to coat. It may look like there's not enough dressing (it's plenty) just keep tossing and tossing until spinach is completely coated.

I had this for lunch today, with warm garlic bread sticks. I followed the recipe as written and I enjoyed it very much. I used a 10 oz. bag of spinach and this gave 2 very large servings. I mixed the onions, oil and brown sugar together with a wooden spoon, mashing the brown sugar, as I stirred. Then I tilted the skillet and pulled it all to one end and mixed very well. I had no lumps of sugar and the dressing was delicious. You definitely have to toss and toss and toss some more, but all of my spinach was evenly coated. I used salad spoons to toss mine. Next time, I will add the orange segments. I didn't have any on hand this time. I also think crumbled bacon would be good in it. Thank you for a yummy salad recipe! I plan to have it with my next steak dinner.

Something must have gone wrong with my prep of this dressing. The brown sugar didn't dissolve into the oil and instead clumped on the bits of onion. I ended up with more of a paste than a dressing. I did toss it with my spinach and broke up the bits that wanted to clump together. The sugared onion bits did add a lot of flavor to the spinach, and I didn't find that the salad needed any further "dressing". Bacon bits might be a good addition to this salad...and I would work to improve the consistency of the onion/sugar/oil mixture to create more of dressing.
