Spinach Salad With Bacon Dijon Mustard Dressing

"This is a great Salad that aside from the spinach leaves can be changed to your liking. We like spinach leaves, shredded cheddar cheese, sliced purple onion, hard boiled eggs, salt & pepper. The dressing is amazing but use very little! It’s rich, sweet & a little goes a long way! The dressing will last about 3 weeks in the refrigerator in an air tight container. This was given to me from my SIL Heather."

  • Cook bacon till crisp. Drain and crumble.
  • Put all other ingredients in a sauce pan, put on med heat and whisk till combined.
  • Bring to just a boil and cook for 5 to 7 min till starting to thicken, stirring frequently.
  • Take off heat and let cool to room temperate.
