Spinach Souffle Lite

"An easy, flavorful, version of spinach souffle. Frozen kale can be used instead of spinach for variation. The protein from the cottage cheese and the fiber from the spinach make for a very filling, but still rather light and low carb meal."

  • Heat oven to 350°F.
  • Thaw spinach and squeeze out water.
  • Beat eggs and mix in the condensed soup.
  • Combine all ingredients in a bowl and fold until incorporated.
  • Liberally grease a baking dish, you really don't want to try to clean this out of an untreated dish.
  • Divide into 4 large ramekins for entree portions, 8 or more smaller dishes for side dishes, or into one casserole dish.
  • If using Parmesan cheese or bread crumbs (or both), sprinkle them on top.
  • Cook at 350 for 30 minutes or until top is bubbly.
