  • Thaw and drain the spinach.
  • Cook the rice according to package directions.
  • Peel and chop the shallot and the garlic.
  • Rinse and slice the mushrooms and tomatoes.
  • Dice the chicken breasts and season them with salt and pepper.
  • Chop the salami or chorizo.
  • Heat 2 Tbsp of oil in a skillet and saute the shallot and garlic. Turn down the heat, add the spinach and cook for 8 minutes on low.
  • Heat the remaining 3 Tbsp of the olive oil in another big skillet or wok and saute the chicken about 5 minutes.
  • Add the salami or chorizo and mushrooms and fry for another 3 minutes.
  • Add the cooked rice and spinach and mix well.
  • Salt and pepper to taste.
  • Top with slices of tomato and serve.
