St. Patrick's Day Cake

  • Cake

  • 1 (18 1/4 ounce) package white cake mix
  • 3 egg whites (or as called for by your cake mix)
  • 13 cup oil (or as called for by your cake mix)
  • 1 13 cups water (or as called for by your cake mix)
  • 2 (3 ounce) packages lime gelatin
  • 1 cup boiling water
  • 12 cup cold water
  • TOPPING

  • 1 cup cold milk
  • 1 (3 1/2 ounce) package vanilla instant pudding mix
  • 1 (8 ounce) carton frozen whipped topping, thawed
  • green sprinkles

  • Prepare and bake cake according to package directions, using a greased 13-in. x 9-in. x 2-in. baking dish.
  • Cool for 1 hour.
  • In a small bowl, dissolve gelatin in boiling water; stir in cold water and set aside.
  • With a meat fork or wooden skewer, poke holes about 2 inches apart into cooled cake.
  • Slowly pour gelatin over cake; refrigerate until cake is completely cool and gelatin is set.
  • In a bowl, whisk milk and pudding mix for 2 minutes or until soft-set.
  • Fold in whipped topping.
  • Spread over cake.
  • Decorate with sprinkles.
  • Cover and refrigerate until serving.

  1. This was a very easy and tasty cake. My husband ate 3 pieces before finally cutting himself off. Would make again. Thanks for the recipe!
     
  2. Very pretty and surprisingly light! I did not use the topping though, because this was made for a fund raiser and needed to sit out on a table all day. This cake got off to a rocky start when I added it to my shopping list. When I got home from the store, I did not have eggs because step #1 says prepare according to package directions which means the cake preparation ingredients (eggs & oil) do not appear in the shopping list or in the nutritional panel. This is a flexible recipe. Think about black cherry jello in a white cake with white chocolate pudding in the topping. Thanks chef!
     
  3. This was a nice and easy cake .My daughter baked the cake and my younger three helped with the mixing and the sprinkles.They enjoyed this activity since they are about a quarter Irish .Not alot of Irish on the Big island.Thanks so much,Mrssoupie.
