Stained Glass Window / Lollipop Cookies

"This is from the "Dining In" kosher cookbook; these cookies turn out really pretty. As a general rule, I hate working with dough that I need to roll, but I found this one very easy to deal with. I'm copying the recipe verbatim from the cookbook, but I really do not recommend mixing all the ingredients at once!! -- I did that and created a great big floury mess. It's probably a better idea to cream the margarine and sugar, and then alternate between gradually adding the flour and liquid ingredients. As for crushing the lollipops, I put them in a freezer bag and whacked at them with a rolling pin... triple-bagging is probably a good idea! It would probably work to crush them in a food processor, too. With the leftover dough from the cutouts, or if you just don't feel like cutting out shapes in the first place, you can make a "thumbprint" type cookie and fill the "wells" with the crushed lollipops."

  • Preheat oven to 350°F.
  • Mix all ingredients, excluding lollipops, to form dough.
  • Roll out the dough on a lightly floured work surface.
  • With a scalloped-edged cookie cutter, cut large circles from dough.
  • Place the scalloped circles onto lined cookie sheets.
  • With a small cookie cutter, cut out desired shape from the centers of each circle.
  • Remove the dough and fill the shape with crushed lollipops.
  • Bake for 10 minutes, or until the candy melts in the cookie centers.
  • Allow to cool before removing from tray.

  1. I made these with my grandmother every Christmas. We used a life saver, not crushed up, in the middle. It works great! Plus Life saver flavors are delicious.

  1. Fantastic cookie recipe, tasty with the orange juice! I also used room temp butter rather than margarine. We used both Jolly Ranchers and Life Savers, the Jolly Ranchers were best because they didn't bubble lots in the 10 minutes in the oven at 350d. Life savers bubbled earier and they weren't as clear. Used candy in magic bullet and made powder. Filled the cookie right to the top, 1/4 inch thick. You will need 1200 grams of hard candy for a batch of cookie dough and to be liberal with filling them. Kids had fun. These are time consuming to make, and it was more for an fun afternoon with the kids. It took me 3 hours with 3 kids to do the cookies. I made the dough, and sorted/grind candy the day before which took a good hour as well. Thanks for the recipe!

  3. These took quite a long time to make and though they did turn out quite impressive looking, I found the batter kind of bland. The center, for which I used crushed Dum-Dum lollipops, was really tasty so I ended up making some into thumbprints with the lollipops spread out more. But for the amount of work I won't be making these again and that's rare for me to say as I have no problem spending time baking!
     
  4. These are quite possibly the best sugar cookies I've made so far (and I've made tons). At first the dough was a bit crumbly but I just added a tiny bit of water and oil and it came together nicely. I chilled the dough before shaping and I found it really easy to work with. Most of the cookies I just dipped into sprinkles (jimmies) and colored sugar but I did use a few of the crushed candies which of course the kids loved. Thank you so much for a great recipe.
     
  5. These cookies are very good. I can't believe nobody has rated them before! They look very dramatic and labour-intensive, but they're incredibly easy. Thanks for making me look good!

I also struggle with anorexia, and so most of the recipes I create or try are low-calorie and fat-free. I do love to bake, though, and I'm able to do that for others right now, which is nice. I also keep kosher; that, combined with the fact that I don't really eat meat or cheese, means that most of my recipes (or recipes that I try) are non-dairy and vegetarian, or can be easily adapted to suit that. Kitchen gadgets are a horrible weakness of mine ... it is just so much fun to try out crazy new products that sometimes I can't help myself! Limited kitchen storage space has managed to sort of curtail that little habit.
