- 1 medium onion, finely chopped
- 2 tablespoons butter
- 1⁄2 cup celery, chopped
- 2 tablespoons cider vinegar
- 4 tablespoons lemon juice
- 2 tablespoons brown sugar
- 1⁄8 teaspoon red pepper
- 2 tablespoons bacon fat
- 1 cup ketchup
- 2 tablespoons Worcestershire sauce
- 1⁄2 teaspoon dry mustard
- 1 cup water
- 1⁄2 teaspoon salt
directions
- Melt butter; add onions and celery; cook til soft. Add remaining ingredients. Stir well and heat to boiling.
- For spareribs; remove excess fat from ribs, brown on both sides in hot fat.
- When sauce is boiling, pour over ribs. Bake at 350°F for 1 3/4 to 2 hours.

I made this sauce to use in BBQ'ing some skinless chicken thighs and it was wonderful. It isn't too sweet, has a bit of a tang and the perfect amount of heat for my tastes. I have never had a sauce with bacon fat added and loved that extra flavor added into the sauce. Thanks for sharing your recipe. Made for your win in Football Pool.
