Starflower's Healthy Chicken Parmesan

"I grew up in an Italian family, and love all the classic Italian foods, but wanted to make a version of the chicken parmesan that wouldn't be quite as unhealthy. Everyone always says how good this is, and it is so easy to make. You don't have to stand over the stove frying away, just pop it in the oven for the same great taste."

  • Preheat oven to 425 degrees F.
  • Pound chicken breasts with flat side of meat mallet until flattened out and even thickness (or just buy skinnier pieces of chicken, a lot of the individually wrapped breasts you can get are the perfect size).
  • Mix bread crumbs and italian herbs, put on flat dish and press both sides of chicken into crumbs to cover completely.
  • Place chicken in a baking dish, and top with each with a slice of provolone cheese.
  • Bake 20 minutes on middle rack of oven (or until cheese is golden and crispy around edges).
  • Serve with spaghetti noodles and your favorite spaghetti sauce, depending on how much sauce you like I usually make about 3-4 tablespoons per chicken breast to have on top of chicken and noodles.

I'm 22 years old and a nursing student. I love to cook, and I'm pretty sure if I have a midlife crisis I would go to cooking school.
