Starlight Mint Surprise Cookies

"A really good sugar cookie with a mint surprise! My Mom would make these for special occasions. I also remember feeling special when sharing these when she had her afternoon tea...they are really yummy! )Time est. does not include the dough chilling)"

  • Sift together the flour,baking soda and salt.
  • Cream the butter, sugars.
  • Add the eggs, vanilla- beat well.
  • Blend in the dry ingredients.
  • Cover and chill at least two hours or overnight.
  • Take a tablespoon size amount of dough and enclose/conceal mint in dough.
  • Place on ungreased baking sheet.
  • Place walnut half on top.
  • Bake at 375° for 9-12 minutes.

  1. You are all probably too young to realize that "Starlight" is the brand of mint used in the cookies! They have them at Walmart and Walgreens and Target and on Amazon and Jet.
     
  2. I make these with solid mint wafers -- my mom's recipe was very specific about not using them. Trader Joes calls them UFOs, Ghiradelli sells them, and they might be elsewehere as well. Mint Hershey kisses might also work (but would be lumpier). I use the smallest possible amount of dough around the mint to make as many cookies as possible.
     
  3. I have been making these cookies for years with a few changes. They are me sister's favorite, so i have to make them every year. I add a little food coloring in for christmas so it does't look so bla. It does take a little time wraping the mints but the finished product is very tasty.
     
  4. Awesome. I used Andes candies (they had to be cut in half), and subbed Splenda for the sugar. Made 40 cookies. They are so good that I made BF run to the store for more Andes so I can make more tomorrow!
     
  5. I made these last year for Christmas and they were great! I drizzled some melted frosting on top of them as they looked too plain for a cookie tray. Thinking of drizzling melted chocolate and white almond bark across them this year.

<P>I'm a Mom of three boys: 19, 16, 13 (Josh, Jake and Jonah) and a 1 yr old golden retriever-Jethro. I work full-time as a Medicare compliance analyst for a non-profit health insurer. I love to cook - although I don't always have enough time to do as I'd like to do. I don't especially care to do the clean up though- but who does?? Food in general brings people together and makes people feel at ease. My boys love to help out in the kitchen-especially if I'm baking bread or baking sweet treats for them. If anyone were to ask them what I put in a recipe - first two ingredients they'd list would be olive oil and garlic -- (well not for the sweet stuff..at least)! I'm constantly browsing to see how I can alter/influence my family's eating - as well as trying to get it on the table quickly! My boys are all hockey players - so I spend a lot of time at the ice arena. When I have time of my own..I try to get on the golf course or read cookbooks.</P>
