- 1 lb ground beef
- 1⁄2 cup chopped onion
- 1⁄4 cup salsa
- 1⁄4 cup ketchup
- 1 tablespoon chili powder
- 1 teaspoon salt
- 16 flour tortillas (7 inches)

- shredded lettuce
- chopped tomato
- shredded cheddar cheese
- sour cream
directions
- In a skillet, cook beef and onion over medium heat until meat is no longer pink; drain.
- Add salsa, ketchup, chili powder and salt; heat through.
- Cut each tortilla into a 4-in. square; set scraps aside.
- Microwave eight squares at a time for 20 seconds.
- Press onto the bottom and up the sides of greased muffin cups; set aside.
- Cut tortilla scraps into stars with a 1-in. cookie cutter; place on a greased baking sheet.
- Bake at 350° for 6 minutes or until golden brown; set aside.
- Fill each tortilla cup with 2 tablespoons meat mixture.
- Bake for 12-15 minutes longer or until tortillas are golden brown.
- Serve with toppings of your choice; garnish with toasted stars.

These were okay--adorably cute but needing some tweaking. I honestly didn't care for the filling--it was too sweet for our taste. Also, the bottoms were too round to stand up on the plate, so although they were extremely cute, they kept tipping over. I like the idea though, and I will make them again with alterations to suit our tastes, such as using beans instead of meat, and working on a way to make them flatter on the bottom. I made 6 in Texas-size muffin tins, with larger squares of tortillas, and served them for dinner. Thanks for the idea!

I chose to make these as our dinner, rather than a snack, so I filled them with more than 2 TBS of meat each. The flavors blend nicely and they're fun to eat. We topped ours with shredded cheddar and sour cream. I didn't make any cut outs from the tortilla leftovers but that would look cute. DH, as usual, was very pleased with his meal.
