  • 1 (15 ounce) can soup (I like campbell's chunky chicken and sausage gumbo)
  • 5 eggs
  • 12 cup shredded cheddar cheese

  • Pour soup in medium mixing bowl, add eggs, and mix together.
  • In a medium to large oven-capable skillet, grease the pan and pour mixture into the pan.
  • Cook on low to medium heat for 8-10 minutes.
  • Set oven to broil, sprinkle cheese on top of frittata and stick pan on middle rack to broil for 5 minutes or until top is slightly browned.
  • Cut into wedges, let cool, and serve.
