  1. Preheat oven to 400°F.
  2. Heat olive oil over med-high heat. Add onions, and sprinkle with brown sugar, Herbes de Provence, and salt. Cook 5 minutes, reduce to low heat and cover.
  3. Clean and puncture holes in all sides of both baking potatoes. Wrap in foil and place in oven. Bake 45 minutes or until tender all the way thru.
  4. Remove potatoes from oven. Slice in half length-wise and plate.
  5. Spoon half of onions and half of bleu cheese onto potatoes, lying steak slices across the top, and enjoy with a salad!
