Steak Baked Potatoes With Bleu Cheese and Caramelized Onions

- 2 large baking potatoes
- 12 ounces steak, cooked and sliced against grain
- 1 onion, Walla-Walla, finely chopped
- 1 tablespoon olive oil
- 1 tablespoon brown sugar
- 1 teaspoon herbes de provence
- 1⁄2 teaspoon salt
- 1⁄2 cup blue cheese
directions
- Preheat oven to 400°F.
- Heat olive oil over med-high heat. Add onions, and sprinkle with brown sugar, Herbes de Provence, and salt. Cook 5 minutes, reduce to low heat and cover.
- Clean and puncture holes in all sides of both baking potatoes. Wrap in foil and place in oven. Bake 45 minutes or until tender all the way thru.
- Remove potatoes from oven. Slice in half length-wise and plate.
- Spoon half of onions and half of bleu cheese onto potatoes, lying steak slices across the top, and enjoy with a salad!
