directions

  • 1. Place precooked baguette into the oven for 10-12 minutes at 350.
  • 2. While this is cooking, season steak with salt and pepper, and begin cooking it in 4 tablespoons of butter on medium heat. While you are cooking it, tilt your pan to the side and drizzle butter over the steak. You should cook it for about 5-6 minutes per side to get it to a medium result.
  • 3. Poach 2 eggs and lightly salt and pepper them. Make the yokes slightly runny.
  • 4. In a small pot, melt the other stick of butter.
  • 5. Simultaneously, place 3 egg yokes into the blender. Add salt, pepper, and squeeze the lemon juice into the blender. Remove any stray seeds.
  • 6. Begin to blend the mixture. While you are blending, add the melted butter a small stream at a time. Stop every few seconds to simply blend until your hollandaise sauce thickens.
  • 7. When you finish, cut a large piece of baguette off of the loaf. Hollow it out, but save the inside part of the bread.
  • 8. Take the baguette shell, and place it on a plate.
  • 9. Take the steak, and cut it into small strips. Place several of those strips inside the baguette shell. Place the poached egg on top of the baguette shell. The spoon hollandaise mixture on top of the egg.
  • 10. Place the remainder of the bread on the side of your tower. Put a dollop of hollandaise on it as well, and serve.
