Steak-House Seared Beef Tenderloin Filets

"I found this method of searing filets in a magazine and thought the result was amazing. I've been cooking them this way ever since. I'm submitting the recipe here as I'm afraid of misplacing such a treasure."

  • Preheat oven to 425 degrees.
  • Season filets with kosher salt and pepper.
  • Heat an oven-proof pan over medium-high heat for 5 minutes.
  • Add oil and heat briefly.
  • Sear filets in oil on one side for 4-5 minutes. Turn them over, place the pan in the oven, and roast to desired doneness. (For medium rare that would be approximately 7 minutes.).
  • Allow filets to rest 5 minutes before serving.

  1. i have tried to cook a basic steak so many times its not even funny and every time i either way overcook it or way undercook it. finally at age 35 i have finally achieved the impossible. with this recipe, i cooked a perfect medium rare beef filet. it sounds stupid but this is a big deal for me lol
     
  2. So I spent some hefty bucks on my tenderloin steaks but it was a special occasion and I wanted to cook a special meal. I was nervous all day about overcooking the steaks. I wanted a perfect medium rare and that was exactly what I got. Followed the recipe as written. Steaks were perfectly seared, melt in your mouth tender with a bright pink center. Only seasoning needed was the salt and pepper. Be generous with the salt as it helps create the nice sear.

  1. afew more spices, garlicpowder and A few more spices, garlic and a little Great American Land and Cattle Company Seasoning, great stuff, otherwise straight by the recipe and it was so tender. After I trimmed it I said no more cause it was some work, but now I will do it again, it is worth it. Bill
