Steak, Peppers and Mushrooms, Oh-My!

ingredients
- 1 1⁄2 lbs round steaks, cut in 1-inch strips
- 1 large red pepper, chopped thick
- 1 large green pepper, chopped thick
- 1 small onion, sliced
- 2 cups fresh mushrooms, sliced
- 3 garlic cloves, diced
- 3 tablespoons Worcestershire sauce
- 1 (14 1/2 ounce) can tomato sauce
- 1 (14 1/2 ounce) can diced tomatoes
- 2 teaspoons salt
- 2 teaspoons pepper
- 1 tablespoon oregano leaves
directions
- In a large skillet (or a dutch oven), cook meat, onion and garlic until meat is brown.
- Once meat is browned, add peppers and mushrooms and cook until tender (about 5-8 minutes).
- Add rest of ingredients to pot and simmer for about 20 minutes.
- Serve plain, with rice or with mashed potatoes.

Great dish! I loved the ease in preparing this (biggest job was prepping the veggies, but that's therapeutic anyway!) The only change I made was to add the garlic with the peppers and mushrooms to avoid burning it. Served over rice with a side salad, we had a wonderfully healthy fresh meal. Thanks for sharing! I teach at both a high school and college several miles away from home. Cooking during the week is sometimes difficult to do so I'm always looking for easy recipes I can incorporate into a busy week. On weekends, you'll usually find me cooking up a storm for occassional leftovers for the week or to entertain guests.
My favorite tool to cook with... the grill. If I didn't live so close to the cities, I'd cook over an open pit fire every night.
